Preparation Time : 5 minutes
Cooking Time : 8-9 minutes
Serves : 4-6
Ingredients :
30g butter
400g smoked salmon, sliced into strips
350g fettuccine
600ml fresh thickened cream
1/2 tsp ground nutmeg
grated rind half lemon
salt and fresh ground pepper for seasoning
1/2 bunch chives, snipped
extra chives for serving
Method:
Bring a large pan of water to the boil and add a pinch of salt.
Cook Fettuccine for 8-9 mins until al denta. Drain.
Menawhile, melt butter in a saucepan and add the cream.
Season with nutmeg, lemon rind and freshly ground pepper.
Bring to the boil and simmer for about 7 minutes until reduced and slightly thickened.
Add the smoked salmon and chives.
Taste and add a pinch of salt.
Stir until just heated through, be careful not to boil.
Return the drained fettuccine to the pan and pour over the smoked salmon and cream sauce.
Toss to combine.
Serve at once with extra snipped chives scattered over.
